In the kitchen, we sometimes find ourselves with an abundance of egg yolks, whether you made too many cocktails requiring egg whites over the weekend or followed a recipe that called for an excess of egg whites. Whatever the reason, here’s what you can do with those yolks, depending on how many you have.

How to use your leftover egg yolks:
1 egg yolk:My top choice is mayonnaise. You can also use one egg yolk to enhance your chocolate chip cookie dough.
2 egg yolks:A great option is carbonara sauce. Of course, the number of yolks can increase depending on how much sauce you need to make.
3 egg yolks:Hollandaise sauce is my top choice for three yolks.
4 egg yolks:With four yolks, ice cream is my go to. Some recipes also require six yolks for ice cream!
5 egg yolks:Though not the simplest option, it’s certainly the most indulgent. For five yolks, opt for a rich crème brûlée.
6 egg yolks:Lemon curd is a great choice for using up six yolks. You can also consider egg nog or ice cream as alternatives.
